“Podere Il Caio” Orvieto Classico Superiore DOC

DOC Orvieto Classico Superiore of Castello di Corbara , as stated by production regulations, is the result of a
blend of several varieties of grapes, with the prevalence of Grechetto and Malvasia. The vineyards dedicated to
the production of this wine are located on the western side of the Estate at around 200 meters above sea level.
They enjoy an excellent exposure to the south-southwest. The soil of Pliocene origin is mainly clayey with good
loam deposit. Over the years, the Estate has reproduced and transplanted the original biotype of white grape vines
so as to retain its unique characteristics. The vineyards are carefully monitored throughout the phenological
phases with a view to a limited high-quality production. To further enhance the quality, the bunches planted in
each individual vineyard are separately harvested and vinification takes place in steel containers, separated
depending on the variety and maturity of the grapes. Alcoholic fermentation lasts for about a month at controlled
temperature and with selected ferments. At the end of the vinification process, the wine is kept on fine lees for
over two months to impart aroma and bouquet, thanks to the lysis of the ferments. After racking and further
processing, the wines are blended, bottled and bottle-aged for around 2 months before being put on the market.
