“Podere Il Caio” Rosso Umbria IGT Sangiovese Merlot

"Podere il Caio" Rosso IGT of "Castello di Corbara" is a blend of grapes of Sangiovese and Merlot varieties, with
a presence of Cabernet Sauvignon and Montepulciano. The vineyards from which the grapes are harvested are
located at various altitudes and exposures, and are planted on soils of textures ranging from medium to loose. The
vineyards are carefully monitored during the phenological phases with the objective of achieving high-quality
grapes. Once ripe, the bunches are harvested separately depending on the grape variety and on its field of origin,
then, still kept separated with the same criteria, they are moved into steel containers for vinification and
maceration, and will stay there for about 12 – 15 days at controlled temperature. When malolactic fermentation
takes over from the initial fermentation, most of the wine is transferred into small oak casks, French "barriques",
while a small percentage is put into Slavonian oak casks, where it matures for about 3-5 months.
The wine is then bottle-aged for around 2-3 months before being put on the market.
