“Castello di Corbara” Lago di Corbara DOC Cabernet Sauvignon

Castello di Corbara's Lago di Corbara Doc Cabernet Sauvignon is obtained from carefully selected Cabernet
Sauvignon grapes harvested from the precious "Ponticello" vineyard, a field made up by a medium-texture soil on
alluvial substrata. Our firm takes great care of the vineyard since the earliest phenological phases, with the aim of
always maintaining a good balance between the plants' production of leaves and its fruit output, according to the
changes in climate. Once ripe, the bunches are harvested separately depending on the grape clone and on its field
of origin, then, still kept separated with the same criteria, they are moved into steel containers at controlled
temperatures, where vinification and maceration will take place for around 15-18 days. After the initial
fermentation, the malolactic fermentation occurs and the wine is taken into small oak casks, where it remains for
12 months and is decanted only once in order to facilitate cleaning. It is finally bottle-aged for 5-6 months, then
becoming suitable to be put on the market..
