“Castello di Corbara” Lago di Corbara DOC Sangiovese Merlot Cabernet


Lago di Corbara DOC of "Castello di Corbara" is the result of a blend of Sangiovese, Merlot and Cabernet Sauvignon grapes wi th a presence of Montepulciano. The vineyards from which the grapes are harvested are located at various altitudes and exposures. The texture of the soil varies from medium (clay loam soils) to loose. The vineyards are carefully monitored throughout the phenological phases with an eye to achieving high-quality grapes. When ripe, the bunches are harvested separately depending on the grape clone and on its field of origin. Vinification and maceration take place in steel containers for around 12-15 days, at controlled temperature. Each grape variety is separately vinified, depending not only on the type of grape, but also on the vineyard it was harvested from. As soon as malolactic fermentation succeeds the first fermentation; the wine is taken into small oak casks, French "barriques", while a small percentage is put into Slavonian oak barrels, where it matures for 12 months. It is then bottle-aged for about 5-6 months before being put on the market.

The wine is transferred to French wooden barriques (80%) and a small percentage to Slavonian oak casks (20%) for 12 months. Bottle- aging lasts from 5-6 months in a thermo-controlled wine cellar at 15-16°C
